Ingredients

  • 1 cup Minute® Ready to Serve Southwest Pinto Beans with White Rice & Vegetables
  • 1/2 can (12 oz) whole kernel corn, drained
  • 2 tbsp feta cheese, crumbled
  • 1/4 jalapeño, seeded and diced
  • 1 tbsp lime juice
  • 1 tbsp mayonnaise
  • 1 tbsp sour cream
  • 2 tsp finely chopped fresh cilantro

Instructions

  • This corn and rice bowl is simple to make but loaded with flavor. Make this in minutes and feel like you’re having a fiesta!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Toss together corn, feta, jalapeño, lime juice, mayonnaise and sour cream.

    Step 3

  • Top rice with corn mixture; garnish with cilantro.
