Ingredients

  • 7 oz turkey smoked sausage, sliced
  • 1 can (15.5 oz) kidney beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes and green chilies, undrained
  • 2 tbsp chili powder
  • 2 cups water
  • 2 cups Minute® White Rice
  • 3/4 cup shredded Cheddar cheese

    Step 1

  • Cook sausage in a large, nonstick skillet over medium-high heat for 5 minutes, or until lightly browned, stirring occasionally.

    Step 2

  • Add beans, tomatoes and green chilies and chili powder, and stir to combine. Stir in water and bring to a boil.

    Step 3

  • Stir in rice and cheese and cover. Reduce heat to low and simmer for 6-8 minutes, or until water is almost absorbed. Stir until cheese is completely melted.
