This rice pudding recipe with Irish cream is a unique take on a dessert classic.
Bring milk to a simmer in a small non-stick pan. Stir in rice. Remove from heat, cover and let stand 5 minutes, or until most of milk is absorbed.
Meanwhile, whisk heavy whipping cream, chocolate syrup, vanilla extract, almond extract and egg yolk together. When rice is ready, return to medium heat and stir in egg mixture. Simmer, stirring frequently, 5 minutes. Pudding will thicken as it cools.
Best served warm or at room temperature. Refrigerate any leftovers in a sealed container. Reheat in microwave 1 to 2 minutes.
