Sriracha Salmon, Basmati Rice and Guacamole Burrito

Ingredients

  • 1 cup Minute® Ready to Serve Basmati Rice
  • 1/4 cup cooked pinto beans, drained and rinsed
  • 1 large whole wheat tortilla
  • 1 pouch (2.5 oz) pink salmon
  • 1/3 cup chopped tomato
  • 1/4 cup prepared guacamole
  • 1/4 cup chopped red onion
  • 1/4 cup shredded Cheddar cheese
  • 1 tsp Sriracha

Instructions

  • Make a quick and easy lunch on the go with this Sriracha Salmon, Basmati Rice and Guacamole Burrito filled with Minute® Ready to Serve Basmati Rice.

    Step 1

  • Heat the rice according to package directions.

    Step 2

  • Place beans in a microwave-safe container and microwave on HIGH for 30 seconds, or until hot.

    Step 3

  • Stir the rice and beans together.

    Step 4

  • Wrap the tortilla in paper towels and microwave on HIGH for 15 seconds, or until warm.

    Step 5

  • Place the rice and bean mixture, salmon, tomato, guacamole, onions and cheese down the center of the tortilla. Drizzle with Sriracha and roll up.

    Step 6

  • Serve immediately.
