Ingredients

  • 1 cup Minute® Ready to Serve Brown Rice
  • 2 small (8-inch) flour tortillas
  • 1 pouch (2.5 oz) pink salmon
  • 1/4 cup thinly sliced carrot
  • 1/4 cup thinly sliced cucumber
  • 1/4 cup edamame
  • 1 tsp Sriracha

Instructions

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Wrap tortillas in paper towels and microwave on HIGH for 15 seconds, or until warm.

    Step 3

  • Lay tortillas out on a plate or cutting board. Lay rice, salmon, carrots, cucumber and edamame down center of each tortilla. Drizzle with Sriracha and roll up. Serve immediately.

    Recipe Tips
    To pack ahead and serve hot: let rice cool to room temperature after cooking. Assemble ingredients according to directions above. Wrap securely in plastic wrap and refrigerate. To serve, remove from plastic, wrap in a paper towel and microwave on HIGH at 30 seconds intervals until heated through. Serve immediately.
