Step 1
Wrap broccoli in damp paper towels and place on a microwave-safe plate.
Step 2
Microwave on HIGH for 1½ minutes.
Step 3
Heat rice according to package directions.
Step 4
Stir together rice, broccoli, salmon, carrot, celery, bell pepper, onions, cashews, hoisin and Sriracha in a medium bowl and toss to combine.
Step 5
Spoon into lettuce leaves and serve immediately. Top with chia seeds, if using.
To pack ahead and serve cold: Let rice and broccoli cool to room temperature after cooking. Assemble ingredients in an airtight container and refrigerate until ready to eat.
