Sweet and Spicy Salmon and Brown Rice Lettuce Wraps

Ingredients

  • 1/2 cup broccoli florets
  • 1 cup Minute® Ready to Serve Brown Rice
  • 1 pouch (2.5 oz) pink salmon
  • 1/4 cup grated carrot
  • 1/4 cup sliced celery
  • 1/4 cup chopped red bell pepper
  • 1 green onion, sliced
  • 1 tbsp cashews, coarsely chopped
  • 2 tsp hoisin sauce
  • 1 tsp Sriracha
  • 4 butter lettuce leaves
  • 1/8 cup chia seeds (optional)

Instructions

  • Savor lettuce wraps as you’ve never done before with these deliciously-bold Sweet and Spicy Salmon and Brown Rice Lettuce Wraps. Enjoy at home or make them to-go!

    Step 1

  • Wrap broccoli in damp paper towels and place on a microwave-safe plate.

    Step 2

  • Microwave on HIGH for 1½ minutes.

    Step 3

  • Heat rice according to package directions.

    Step 4

  • Stir together rice, broccoli, salmon, carrot, celery, bell pepper, onions, cashews, hoisin and Sriracha in a medium bowl and toss to combine.

    Step 5

  • Spoon into lettuce leaves and serve immediately. Top with chia seeds, if using.

    To pack ahead and serve cold: Let rice and broccoli cool to room temperature after cooking. Assemble ingredients in an airtight container and refrigerate until ready to eat.
