  • 1 cup Minute® Ready to Serve Brown Rice & Quinoa
  • 2 cups mixed lettuce greens
  • 1/2 cup chickpeas, drained and rinsed
  • 1/4 avocado, peeled, pitted and sliced
  • 2 tbsp crumbled goat cheese
  • 2 tbsp ranch dressing

  • Heat rice and quinoa according to package directions.

  • Serve in a bowl topped with greens, chickpeas, avocado and crumbled goat cheese. Drizzle with ranch dressing.
