Lemon Chicken and Rice

Want to add a Mediterranean touch to your meal? Look to your fridge and pantry for help! Enhancing the flavor of your meal can be as simple as coating your chicken breast with lemon juice before cooking and infusing your rice cooking water with dried herbs and broth such as thyme, oregano or basil. Serve with a side of roasted tomatoes and asparagus for a complete meal!

Spanish & Mexican Chicken and Rice

Spanish and Mexican rice may often be used interchangeably on account of their wide variety of uses as side or main dishes and burrito or enchilada fillings. However, these two are actually different and we’ll help you distinguish the different nuances to impress your friends or family!

Spanish rice is often identified as a more yellow rice because of the saffron or turmeric used with milder flavors from vegetables. A Mexican rice recipe uses spicier flavors such as jalapeños, green chilies or cumin and may be made with a combination of tomato sauce and water or broth for a rich red color.

Southern Chicken and Rice

For the ultimate comfort food, southern chicken and rice is generally a convenient one-pot meal using chicken, veggies, salt, butter and white rice. There are plenty of different spice ingredients you can add depending on your region, for example something more spicy for tex-mex or Cajun seasoning for a New Orleans classic.

Cajun Chicken and Rice

Speaking of Louisiana, learn how simple it is to make your own Cajun-inspired meal with chicken and rice straight from New Orleans. Use a prepared seasoning mix to flavor your dish or make a large homemade batch including paprika, garlic powder, oregano, parsley, salt, pepper and cayenne in an Instant Pot Cajun Chicken and Rice recipe. Serve alongside other classics like red beans and rice recipes.

Cuban Chicken and Rice

The dynamic duo is more than just a convenient dinner combo, it’s worldwide popularity has made it part of iconic dishes like arroz con pollo throughout Spain and in many Latin American countries like Cuba or Puerto Rico. Similar to Mexican rice, this dish uses a tomato and broth mixture to cook the rice along with cumin, annatto and turmeric to get the characteristic color, but the chicken is cooked with the rice rather than on the side or on top.

Puerto Rican Chicken and Rice

Another famous recipe for arroz con pollo is from Puerto Rico, which has subtle nuances from the Cuban version including the use of pigeon peas and a cooking base, or sofrito, of herbs, spices and veggies.

If you are really pushed for time or are trying to go vegetarian, there are of course other alternatives, for example microwavable recipe for egg fried rice.
