Heat oil in a large, nonstick skillet on medium-high heat.
Add chicken, onions and garlic and cook chicken for 3 minutes on each side, or until chicken and onions have started to brown.
Add soup and chicken broth to skillet. Add rice. Stir to combine and bring to a boil.
Lower the heat to a simmer and cook, covered, for 5 minutes or until chicken is cooked through (165º F).
Let sit for 3-5 minutes, or until liquid is absorbed. Serve sprinkled with chopped parsley, if using.
