Heat oil in a large, nonstick skillet over medium-high heat.
Add chicken, onions and garlic. Cook chicken for 3 minutes per side, or until chicken has started to brown.

Lower heat to a simmer and cook, covered, for 5 minutes, or until chicken is cooked through (165º F).
Let sit for 3-5 minutes, or until liquid is absorbed. Garnish with parsley, if using.
