Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon onion powder
  • 2 cups chicken broth
  • 1/2 cup milk
  • 2 cups broccoli florets
  • 2 cups Minute® White Rice
  • 1 cup shredded Cheddar cheese

Instructions

  • Classic dishes are classic for a reason! This Cheesy Chicken and Rice Recipe with Broccoli is no exception. Loaded with broccoli, chicken and gooey Cheddar cheese, it will always be a favorite at the dinner table.

    Step 1

  • Heat olive oil in a large skillet over medium-high heat. Sauté chicken for about 5 minutes, or until cooked through. Remove to a plate and set aside.

    Step 2

  • Melt butter over medium heat. Add flour and whisk until smooth and lightly bubbling.

    Step 3

  • Add garlic salt and onion powder. Slowly whisk in chicken broth and milk. Simmer, whisking, until slightly thickened, about 2 minutes.

    Step 4

  • Stir in broccoli and rice. Top with chicken and sprinkle with cheese. Cover skillet and cook on low for 5 minutes, or until rice is tender and broccoli is cooked through.

    Recipe Tips

    To reduce the cook time, skip Step 1 and add 2 cups chopped, cooked chicken in place of the raw chicken breast.

    If you have leftover, roasted vegetables on hand, use 2 cups in place of the broccoli.
