Prepare rice according to package directions.
Preheat oven to 350°F. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add onion and sauté until tender, 3-5 minutes.
Stir in rice, soup, broccoli and cheese dip. Spoon into a greased, 1 1/2-quart casserole dish.
In a medium, microwave-safe bowl, microwave remaining butter on HIGH for 30 seconds, or until melted. Add bread cubes and mix well. Sprinkle bread on top of casserole. Garnish with cheese.
Bake for 30-35 minutes, or until heated through.
For a more filling meal, mix 2 cups of shredded, cooked chicken or shrimp into the skillet in Step 3. Alternatively, you can serve this side dish with a lean cut of cooked meat, fish or poultry and a mixed green salad tossed with your favorite dressing.
To enhance the flavor even more, sauté 1 package (8 oz) sliced mushrooms along with the onion.
