Ingredients

  • 1 tbsp canola oil
  • 4 boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 2 cups Minute® White Rice
  • 2 cups broccoli florets
  • 3/4 cup shredded Cheddar cheese

Instructions

    Step 1

  • Heat oil in a large, nonstick skillet over medium-high heat.

    Step 2

  • Add chicken; cover. Cook for 4 minutes on each side, or until cooked through (165°F). Remove chicken from skillet.

    Step 3

  • Add broth to skillet. Bring to a boil.

    Step 4

  • Stir in rice, broccoli and cheese. Top with chicken; cover. Cook on low heat for 5 minutes. Stir until cheese is melted and combined.
