  • Prepare rice according to package directions substituting lite coconut milk for water. Let cool completely.

  • Fold Greek yogurt into rice. In medium size serving bowl, combine rice/yogurt mixture, pineapple, strawberries and blueberries. Sprinkle coconut flakes over top. Serve at room temperature, or chilled if desired.


Recipe Tips

Stir in 1 cup of mini marshmallows if desired. For a lighter version, substitute coconut water for the coconut milk.
