  • 1 cup Minute® Jasmine Rice
  • 1 cup light coconut milk
  • 1 cup vanilla-flavored Greek yogurt
  • 1 cup diced fresh pineapple
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup coconut flakes, toasted

  • This fresh and light version of ambrosia salad includes fragrant Minute® Instant Jasmine Rice simmered in smooth coconut milk, and mixed with creamy Greek vanilla yogurt. It’s then topped with diced pineapple and lots of sweet berries for a refreshing treat.

    Step 1

  • Prepare rice according to package directions, substituting light coconut milk for water. Cool completely.

    Step 2

  • Fold yogurt into rice. In a medium serving bowl, combine rice/yogurt mixture, pineapple, strawberries and blueberries. Sprinkle coconut flakes over top. Serve at room temperature, or chilled, if desired.

    Recipe Tips

  • Stir in 1 cup of mini marshmallows along with the fruit, if desired.

For a lighter version, substitute coconut water for the coconut milk.

Classic Ambrosia

If the sight and sweet smell of ambrosia salad doesn’t take you back to the good old days, we don’t know what will. This refreshing fruit salad is the side dish you need for your next summer barbecue or potluck or can even be served as a unique, sweet dessert.

This version of Ambrosia Salad, ready in just 10 minutes, has a special twist thanks to a unique ingredient. Fluffy jasmine rice, simmered in coconut milk, gives this dish a decadent flavor somewhere between a sweet rice pudding and berries with cream.

Have lots of leftover jasmine rice on hand? Save some and give an aromatic twist to your favorite 15 Minute Chicken and Rice Dinner, or add it to one of your Microwave Egg Fried Rice recipes. You could even toss some into our Red Beans and Rice or a Mexican Rice recipe.

Topping Tips

Top this dish with fresh, seasonal summer fruit of your choice, or feel free to toss in canned oranges, pineapple, maraschino cherries or other fruit cocktail blends. Adjust the flavors to what you prefer!

If you want this dish to remind everyone of grandma’s classic recipe, toss in a cup of mini marshmallows; everyone will thank you!

For a bit of added crunch, sprinkle roasted almonds, walnuts, pistachios or any type of chopped nut over the top of the salad along with the toasted coconut flakes.
