  • Heat quinoa and brown rice according to package directions.

  • In a medium bowl, combine quinoa and brown rice, beans, red and green bell peppers and green onion and blend well.

  • In a small bowl whisk together vinegar, olive oil, honey, lime juice and mint.

  • Pour over quinoa and rice mixture and toss.
