Ingredients

  • 1 cup Minute® Ready to Serve Organic Red Quinoa & Brown Rice with Garlic
  • 1/3 cup black beans
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1 green onion, chopped
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1/2 tbsp fresh lime juice
  • 1 tbsp chopped fresh mint leaves

Instructions

  • If you like the minty sweetness of mojitos, you’ll love the sweet, tangy and minty flavors of this tasty Cuban Mojito Quinoa Salad loaded with fresh veggies!

    Step 1

  • Heat quinoa and rice according to package directions.

    Step 2

  • Combine quinoa and rice, beans, green and red bell peppers and green onions in a medium bowl. Stir to blend well.

    Step 3

  • Whisk together vinegar, honey, olive oil and lime juice in a small bowl. Add in mint.

    Step 4

  • Pour dressing over quinoa and rice mixture and toss well.
