Ingredients

  • 1 can (20 oz) pineapple chunks, drained, juice reserved
  • 1 bag Minute® Rice & Quinoa
  • 1/4 cup canola oil
  • 2 tbsp ponzu sauce
  • 1 tbsp rice vinegar
  • 1 1/2 tsp honey
  • 1 tsp fresh grated ginger
  • 2 pkg (12 oz each) cooked chicken breast strips
  • 2 bags (5 oz each) baby kale

Instructions

  • Get your sweet and savory fix with this delicious and nutritious Baby Kale, Pineapple and Chicken Salad with Ponzu Vinaigrette.

    Step 1

  • Measure out 2 tablespoons of pineapple juice and set aside.

    Step 2

  • Prepare rice and quinoa according to package directions using remaining pineapple juice plus water to measure 1 cup. Set aside to cool.

    Step 3

  • Whisk oil, ponzu sauce, rice vinegar, honey, ginger and 2 tablespoons reserved pineapple juice together in a small bowl.

    Step 4

  • Combine chicken, kale, pineapple chunks and cooked rice and quinoa in a large bowl. Pour ponzu vinaigrette over salad; toss to coat evenly.
