Ingredients

  • 1 cup Minute® Ready to Serve Jalapeño Rice
  • ¼ cup frozen corn, thawed
  • 2 tablespoons green salsa or green enchilada sauce
  • ½ cup cooked chicken, chopped
  • 2 tablespoons shredded Monterrey Jack cheese

Instructions

  • This quick and easy-to-make Salsa Verde Chicken and Rice made with our Minute® Jalapeno Rice Cups is perfect for if you need to eat down your pantry.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a small serving dish combine corn, salsa, chicken and rice.

    Step 3

  • Add cheese and microwave 30 seconds.  Stir and serve.

    Tip

    Top with a dollop of sour cream and sliced green onions.

How to Defrost Frozen Corn

Corn is a kitchen staple all over the world and used in all kinds of different recipes. For longer term preservation, many people freeze their corn in the freezer as frozen corn can last a long time. This means that it must be thawed out before it can be used again.

There are a few different ways to defrost your corn. The simplest way is to leave it in your refrigerator overnight, this is probably the best way to ensure you get the best texture from yoru corn.

If you want your corn to be ready quicker, simply place it into a sealable bag and run under water for around 15 minutes.

If you want your corn to be ready in minutes, you can also use the microwave. Simply put your frozen corn into a microwave-safe bowl and add a few teaspoons of cold water. Your corn should be ready in just a few minutes.
