Ingredients

  • 1 cup Minute® Jalapeño Rice Cups
  • 1/2 cup cooked chicken, chopped
  • 1/4 cup frozen corn, thawed
  • 2 tbsp green salsa or green enchilada sauce
  • 2 tbsp shredded Monterey Jack cheese

Instructions

  • This quick and easy-to-make Salsa Verde Chicken and Rice dish, made with our Minute® Jalapeño Rice Cup, is perfect for busy weeknights.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a small serving dish, combine rice, chicken, corn, and salsa.

    Step 3

  • Add cheese and microwave on HIGH for 30 seconds. Stir and serve.

How to Defrost Frozen Corn

Corn is a kitchen staple all over the world and is used in all kinds of different recipes. For long-term preservation, many people freeze corn as frozen corn can last a long time. Before you cook with it, though, frozen corn generally has to be thawed out.

There are a few different ways to defrost corn. The simplest way is to leave it in your refrigerator overnight. This is probably the best way to ensure you get the best texture from the corn.

If you want your corn to be ready quicker, simply place it into a resealable bag and run it under cold water for around 15 minutes.

If you want your corn to be ready in minutes, you can also use the microwave to defrost it. Simply put the frozen corn into a microwave-safe bowl and add a few teaspoons of cold water. Your corn should be ready in just a few minutes.
