Ingredients

  • 1 cup Minute® Ready to Serve Organic Brown Rice
  • 1/4 cup shredded carrot
  • 1/4 cup corn
  • 1/4 cup edamame
  • 1/4 cup cooked garbanzo beans
  • 1 thinly sliced green onion
  • 2 tbsp basil pesto sauce

Instructions

  • This Corn and Edamame Rice Salad is an excellent dish for meatless Monday or as a post-workout power meal. Plenty of protein will keep you energized and going strong throughout your day!

  • Heat rice according to package directions. Allow to cool.

  • Combine rice, carrot, corn, edamame, garbanzo beans, green onion and pesto sauce in a medium bowl. Mix well.
