Ingredients

  • 2 cups Minute® Ready to Serve Brown & Wild Rice
  • 1 can (15.5 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes and green chilies, drained
  • 1/4 cup chopped fresh cilantro leaves (optional)

  • Heat rice according to package directions.

  • Combine all ingredients in a medium-sized bowl.

  • Top with cilantro, if using.

    Recipe Tips

    To bump up the flavor in this rice salad, mix 1 tablespoon of olive oil with the juice of half a lime. Season the dressing with salt and pepper and pour over the salad.

    For additional flavor, you can also add a pinch of cumin and garlic powder to this salad, if desired.
