  • 1 cup Minute® Ready to Serve Basmati Rice
  • 1 1/2 cups chopped kale
  • 1 pouch (2.5 oz) pink salmon
  • 1/4 cup sliced cucumber
  • 1/4 cup sliced celery
  • 1 tbsp Sriracha sauce
  • 1 tbsp chopped fresh cilantro (optional)
  • 1 tbsp peanuts (optional)
  • lemon wedge (optional)

  • Heat the rice according to package directions.

    Step 2

  • Place chopped kale in a medium-sized bowl and top with rice, salmon, cucumber, celery, Sriracha sauce, cilantro and peanuts, if using.

    Step 3

  • Serve immediately with lemon wedge, if using.

    Recipe Tips

    To pack ahead and serve this dish hot, assemble the ingredients except for the rice in an airtight container and refrigerate until ready to eat. Microwave the rice just before serving and stir together for a hassle free, warm rice meal in less than 5 minutes.

    Make sure to wash all of your vegetables well before chopping and adding them to your dish. To prep kale, tear the leaves off of the stem and chop into bite-size pieces. You can also buy chopped and packaged kale salad to save time. Feel free to use bagged kale as a base for the rice bowl.

    The beauty of a rice bowl is that you can mix and match vegetables of your choice. Not a fan of celery or cucumber? Simply omit or swap them out for other veggies like green or red bell pepper or carrots to add a bit of crunch.
