Heat the rice according to package directions.
Place chopped kale in a medium-sized bowl and top with rice, salmon, cucumber, celery, Sriracha sauce, cilantro and peanuts, if using.
Serve immediately with lemon wedge, if using.
To pack ahead and serve this dish hot, assemble the ingredients except for the rice in an airtight container and refrigerate until ready to eat. Microwave the rice just before serving and stir together for a hassle free, warm rice meal in less than 5 minutes.
