Ingredients

  • 1 cup Minute® Ready to Serve Brown Rice
  • 1 pouch single serving tuna
  • 1/3 cup thinly sliced red peppers
  • 1/2 small avocado, pitted, peeled and thinly sliced
  • 2 tbsp mayonnaise
  • 2 tsp finely chopped chipotle in adobo

Instructions

  • Step 1

  • Microwave brown rice according to package directions.

    Step 2

  • Top rice with tuna, peppers and avocado. Stir together mayonnaise and chipotle. Drizzle over top of rice bowl.

    Flavor Tips

    Substitute chipotle in adobo with 1/2 tsp chili powder.

    Serve with a wedge of lime or lemon if desired.
