With brown rice, chipotle in adobo, tuna and avocado, this lunch rice bowl is packed with veggies, whole grains and tons of flavor.
Microwave brown rice according to package directions.
Top rice with tuna, peppers and avocado. Stir together mayonnaise and chipotle. Drizzle over top of rice bowl.
Substitute chipotle in adobo with 1/2 tsp chili powder.
Serve with a wedge of lime or lemon if desired.
