Ingredients

  • 6 slices bacon, chopped
  • 2 cups fresh mushrooms, sliced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 3 cups chicken broth
  • 3 cups Minute® White Rice
  • 1 cup frozen peas, thawed
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup crumbled blue cheese
  • 1/4 cup chopped parsley

Instructions

    Step 1

  • Cook bacon in a large skillet over medium-high heat, stirring frequently. When bacon is crisp, remove from skillet with a slotted spoon and set aside.

    Step 2

  • Remove all but 2 tablespoons of bacon drippings from skillet. Over medium heat, sauté mushrooms, onions and garlic. Cook until vegetables are tender, 3-5 minutes.

    Step 3

  • Add broth and bring to a boil. Stir in rice, cover and remove from heat. Let stand for 5 minutes.

    Step 4

  • Stir in peas, Parmesan cheese and blue cheese.

    Step 5

  • Serve risotto topped with crumbled bacon and parsley.
