This Instant Pot Italian mushroom rice is a hassle-free way to make a creamy risotto-like dish in under 30 minutes.
Set Instant Pot multi-function cooker to Sauté setting over High heat. Heat butter and oil. Add in mushrooms, onion, garlic, Italian seasoning, salt and pepper and cook for 6 to 8 minutes, or until vegetables start to brown. Stir in rice, broth, cream, vinegar and Worcestershire sauce.
Lock the lid in place and move the pressure valve to Sealing. Select Pressure Cook on High for 5 minutes. When cooking is complete, allow pressure to release naturally according to manufacturer’s instructions. Carefully remove lid.
Stir in Parmesan, chives and parsley.
Top each plate with shredded beef, chicken or another protein of choice for a heartier rice dish.
To make this meal vegetarian, substitute vegetable broth for the beef broth.
