Creamy Italian Mushroom Rice

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1/2 lb sliced mushrooms
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning mix
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups Minute® Jasmine Rice
  • 1 1/2 cups reduced-sodium beef broth
  • 3/4 cup heavy cream
  • 1 tbsp balsamic vinegar
  • 2 tsp Worcestershire sauce
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp finely chopped fresh chives
  • 2 tbsp finely chopped fresh parsley


  • This Instant Pot Italian mushroom rice is a hassle-free way to make a creamy risotto-like dish in under 30 minutes.

    Step 1

  • Set Instant Pot multi-function cooker to Sauté setting over High heat. Heat butter and oil. Add in mushrooms, onion, garlic, Italian seasoning, salt and pepper and cook for 6 to 8 minutes, or until vegetables start to brown. Stir in rice, broth, cream, vinegar and Worcestershire sauce.

    Step 2

  • Lock the lid in place and move the pressure valve to Sealing. Select Pressure Cook on High for 5 minutes. When cooking is complete, allow pressure to release naturally according to manufacturer’s instructions. Carefully remove lid.

    Step 3

  • Stir in Parmesan, chives and parsley.

    Top each plate with shredded beef, chicken or another protein of choice for a heartier rice dish.

    To make this meal vegetarian, substitute vegetable broth for the beef broth.
