  • Set instant pot multi-function cooker to Sauté setting over High heat. Heat oil and butter; cook mushrooms, onion, garlic, Italian seasoning, salt and pepper for 6 to 8 minutes or until starting to brown. Stir in rice, broth, cream, vinegar and Worcestershire sauce.

  • Place lid on; lock and seal in position. Pressure-cook on High for 5 minutes. Turn off heat and manually release pressure according to manufacturer’s instructions. Carefully remove lid.

  • Stir in Parmesan, chives and parsley.


Recipe Tips

For a vegetarian casserole, substitute vegetable broth for beef broth.
