Preheat oven to 375°F.
Prepare rice according to package directions, substituting broth for water.
Heat a large sauté pan or deep-sided skillet over medium-high heat. Fry bacon until crisp. Remove from pan and break into smaller pieces. Set aside.
Add onions and garlic to pan and sauté until onions are transparent, about 2 minutes.
Stir in rice, condensed soup, spinach and 1/2 cup of cheese. Season with salt and pepper.
Spoon mixture into a 2-quart casserole dish. Top with remaining cheese.
Bake for 20 minutes, or until golden brown and bubbling.
