Ingredients

  • 2 tbsp butter
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeño pepper, seeded and chopped (optional)
  • 2 cups cooked, diced chicken
  • 2 cups chicken broth
  • 1 tbsp garlic and herb seasoning
  • 2 cups Minute® White Rice
  • 1/2 cup (4 oz) Cheddar cheese, cubed
  • 1/2 cup (4 oz) cream cheese, softened
  • salt and black pepper (optional)

Instructions

    Step 1

  • Heat butter over medium heat in a large skillet. Add bell peppers and jalapeño and sauté for 2-3 minutes, until starting to soften.

    Step 2

  • Add the chicken, broth and seasoning and bring to a boil.

    Step 3

  • Add the rice and stir to combine. Cover, remove from heat and let stand for 5 minutes.

    Step 4

  • Add the cheeses and stir until evenly melted. Season with salt and black pepper, if using.
