Preheat oven to 400˚F. Prepare rice according to package directions.
Toss together rice, squash, zucchini, 1 cup cheese, gravy, thyme, salt and pepper in a large bowl.
Meanwhile, coat a 9 x 13-inch baking dish with nonstick spray. Spread rice mixture into baking dish and sprinkle with remaining cheese. Bake for 25 to 30 minutes, until golden brown and bubbling.
Sprinkle with chives before serving.
