Squash, Zucchini and Rice Casserole

With the addition of rice, this twist on a classic Southern casserole is a satisfying side dish with big comforting flavors.

  • Preheat oven to 400˚F. Prepare rice according to package directions.

  • Toss together cooked rice, yellow squash, zucchini, gravy, 1 cup cheese, thyme, salt and pepper.

  • Spread into greased 9 x 13-inch baking dish. Sprinkle with remaining cheese. Bake for 25 to 30 minutes or until golden brown and bubbling.

  • Sprinkle with chives before serving.


Recipe Tips

Sprinkle with 1/3 cup breadcrumbs tossed with 2 tbsp melted butter for crispy topping if desired. Use turkey gravy or chicken gravy. For simple gravy, melt 3 tbsp butter in medium saucepan set over medium heat. Sprinkle with 3 tbsp all-purpose flour. Cook for 2 minutes. Slowly whisk in 2 cups turkey or chicken broth; bring to a boil. Season with 1/4 tsp each salt and pepper. Reduce heat to medium low. Cook for 8 to 10 minutes or until thickened and flavorful.
