Preheat oven to 400˚F. Prepare rice according to package directions.
Toss together cooked rice, butternut or acorn squash, zucchini, 1 cup cheese, gravy, thyme, salt and pepper.
Meanwhile, coat a 9 x 13-inch baking dish with nonstick spray. Spread rice mixture into baking dish and sprinkle with remaining cheese. Bake for 25 to 30 minutes, or until golden brown and bubbling.
