Ingredients

  • 3 tbsp butter, divided
  • 1 package (8 oz) mushrooms, sliced
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 can (15 oz) chicken broth
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 2 cups diced, cooked chicken
  • 2 cups Minute® White Rice
  • 1 tbsp poppy seeds
  • 1 tsp dried dill
  • 1 cup crushed butter crackers

Instructions

  • This easy-to-prepare baked casserole is perfect for holiday gatherings or weeknight dinners. Swap your everyday casserole for this unique Creamy Chicken Poppy Seed Casserole, tonight!

    Step 1

  • Preheat oven to 375°F.

    Step 2

  • Melt 1 tablespoon butter in a large skillet over medium-high heat. Sauté mushrooms, celery and onions until onions are transparent, about 4 minutes.

  • Stir in broth and condensed soup and bring to a boil.

    Step 4

  • Remove from heat and add chicken, rice, poppy seeds and dill. Stir to combine.

    Step 5

  • Spread mixture into a greased, 2-quart casserole dish. Top with cracker crumbs. Melt remaining butter and drizzle over crumbs.

    Step 6

  • Bake for 20 minutes, or until mixture is bubbling and cracker crumbs are lightly browned.
