  • 2 cups Minute® Jasmine Rice
  • 1 pkg (8 oz) plain cream cheese, softened
  • 1/2 cup Buffalo hot sauce
  • 4 cups frozen cauliflower florets, blanched and cooled
  • 2 cups shredded Cheddar cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup finely crumbled blue cheese
  • 2 green onions, thinly sliced


  • Try this savory casserole and enjoy Buffalo-sauce marinated bites of fluffy rice and cheesy roasted cauliflower. Topped with crumbled blue cheese and green onions, this vegetarian casserole is sure to please any hungry crowd.

    Step 1
    Preheat oven to 400˚F. Prepare rice according to package directions. Transfer to greased 8 x 8-inch baking dish.

    Step 2
    Mix together cream cheese and hot sauce until blended. Toss with cauliflower, Cheddar, salt and pepper. Spoon over rice. Sprinkle with blue cheese.

    Step 3
    Bake for 25 to 30 minutes, or until golden brown and bubbly. Sprinkle with green onions.

    Recipe Tips

    Substitute goat cheese or feta for blue cheese, if desired.
