Preheat oven to 375°F. Coat a 2-quart baking dish with non-stick cooking spray.
Mix milk, soup and peas in a medium saucepan. Bring to a boil over medium-high heat, stirring occasionally.
Add rice and tuna; mix lightly. Spoon into prepared dish and sprinkle with cheese.
Bake for 20 minutes, or until heated through.
Make this recipe the way you want it, by using canned, drained peas in place of the frozen peas, or another vegetable altogether. You can also mix things up by substituting the Cheddar cheese with pepper Jack, mozzarella or another favorite. Substitute your favorite condensed cream soup for the cream of mushroom soup.

This recipe is delicious as is, but because it’s so quick and easy to make, it can easily be “dressed up” for a dinner party or to share at a barbecue. For a bit of added flavor and a crunchy, golden topping, try mixing together Parmesan cheese, panko bread crumbs, smoked paprika, fresh parsley and a little bit of melted butter. Sprinkle over the casserole before baking and wow everyone around the table. To add more nutrients, color and flavor, you can also add extra veggies like broccoli, spinach or red bell pepper into the mix before baking.

Form into patties and press into seasoned breadcrumbs, if desired. Bake at 350°F for 15 minutes, or pan-fry until golden brown. Uncooked patties can also be frozen for later use.
