Ingredients

Instructions

    Step 1

  • Heat oil in a large, nonstick skillet over medium-high heat. Add chicken. Cook, stirring occasionally, for 3-5 minutes, until chicken is beginning to brown.

    Step 2

  • Stir in vegetables, pineapple chunks and their juice, water and sweet and sour sauce. Bring mixture to a boil.

    Step 3

  • Stir in rice and cover. Reduce heat to medium-low and simmer for 5 minutes. Remove saucepan from heat. Let stand for 5 minutes or until almost all of the liquid is absorbed and rice is tender.
