Fast and simple, this Mexican inspired rice bowl makes a hearty lunch in minutes. Top with crumbled feta cheese, diced avocado and pickled jalapeño peppers.
Prepare rice according to package directions.
Meanwhile, microwave ground beef in microwave-safe dish on HIGH heat for 2 to 3 minutes, stirring halfway through, until browned, cooked through and no longer pink. Stir in corn; microwave on HIGH heat for 60 to 90 seconds or until corn is heated through.
Toss together rice, beef and corn. Serve in bowl topped with avocado, feta and jalapeños.
Substitute shredded cooked chicken for ground beef, heating with corn.
