Mexican Corn and Beef Rice Bowl

Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1/2 cup (4 oz) ground beef
  • 1/2 cup frozen corn
  • 1/4 cup diced avocado
  • 2 tbsp finely crumbled feta cheese
  • 1 tbsp sliced pickled jalapeño peppers

Instructions

  • All you need to prepare this corn and ground beef rice bowl is a microwave and 5 minutes! Keep our microwavable Minute® Ready to Serve White Rice handy for a quick and tasty meal, anytime.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Meanwhile, microwave ground beef in a microwave-safe dish on HIGH for 2 to 3 minutes, stirring halfway through, until cooked through and no longer pink. Stir in corn; microwave on HIGH for 60 to 90 seconds, until corn is heated through.

    Step 3

  • Toss rice, beef and corn together in a small bowl. Garnish with avocado, feta and jalapeños.

    Recipe Tips

    If you’re all out of ground beef, feel free to substitute shredded, cooked chicken. Simply heat it along with the corn in Step 2.

    For a vegetarian option, substitute plant-based ground round for the ground beef.

No Stove Required

Use leftover ground beef for this recipe, or cook raw meat until it is no longer pink on a microwave-safe dish.
