Step 1
Heat rice according to package directions.
Step 2
Meanwhile, microwave ground beef in a microwave-safe dish on HIGH for 2 to 3 minutes, stirring halfway through, until cooked through and no longer pink. Stir in corn; microwave on HIGH for 60 to 90 seconds, until corn is heated through.
Step 3
Toss rice, beef and corn together in a small bowl. Garnish with avocado, feta and jalapeños.
Recipe Tips
If you’re all out of ground beef, feel free to substitute shredded, cooked chicken. Simply heat it along with the corn in Step 2.
For a vegetarian option, substitute plant-based ground round for the ground beef.
