Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 4 oz ground beef
  • 1/2 cup frozen corn
  • 1/4 cup diced avocado
  • 2 tbsp finely crumbled feta cheese
  • 1 tbsp sliced pickled jalapeño peppers

Instructions

  • Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, microwave ground beef in microwave-safe dish on HIGH heat for 2 to 3 minutes, stirring halfway through, until browned, cooked through and no longer pink. Stir in corn; microwave on HIGH heat for 60 to 90 seconds or until corn is heated through.

    Step 3

  • Toss together rice, beef and corn. Serve in bowl topped with avocado, feta and jalapeños.

    Recipe Tips

    Substitute shredded cooked chicken for ground beef, heating with corn.

    For a vegetarian option, substitute plant-based ground round for ground beef.
