Ingredients

  • 1 cup Minute® Ready to Serve Garlic & Olive Oil Jasmine Rice
  • 4 oz cream cheese, softened
  • 1 tsp sesame oil
  • 2 nori sheets
  • 1/4 cup julienned carrot
  • 1/4 cup julienned cucumber
  • 1/4 cup kimchi, chopped
  • 1/4 avocado, thinly sliced

Instructions

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Combine rice, cream cheese and sesame oil in a small bowl. Stir to blend well.

    Step 3

  • Divide rice mixture between nori sheets, pressing to spread rice over the entire sheet.

    Step 4

  • Lay carrots, cucumbers, kimchi and avocado over rice, along one edge.

    Step 5

  • Roll nori around filling. Cut into desired number of pieces.

    Recipe Tip

    To seal the sushi roll, use a little water to moisten the edge of the nori.

What is Kimchi?

Kimchi is a traditional Korean side dish of salted and fermented vegetables like cabbage, radish, onions and more. You can pick some up in the International section of your grocery store or in the section with Asian food products. Some varieties are spicier than others so if you’re not into hot flavors, start with a mild version and work your way up.

What Should I Know?

When preparing the rice for this dish, the sesame oil is important because it helps to give your dish that signature flavor we all love. The cream cheese works here as a glue that will help keep your rice nice and compact, like sticky rice. The other ingredients can vary according to your taste. If you’re not a big fan of kimchi, simply omit it and substitute it with your favorite vegetables.

No sushi mat? Just roll the mixture tightly by hand or with a piece of plastic wrap or foil. Feel free to sub in plain Ready to Serve Jasmine Rice instead of the naturally-flavored variety used here, if that’s what you have on hand.
