Ingredients

  • 1 cup Minute® Ready to Serve Cilantro & Lime Jasmine Rice
  • 1 cup cauliflower florets
  • 2 tbsp prepared tandoori sauce
  • 1 tbsp plain Greek yogurt
  • 1 tbsp fresh cilantro leaves

Instructions

  • This shortcut version of an Indian-inspired classic is loaded with flavor in every bite!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Toss cauliflower florets with tandoori sauce in a small, microwave-safe bowl. Cover with plastic wrap, leaving a gap on one side to vent. Cook on HIGH for 2-3 minutes, stirring halfway through the cook time, until cauliflower is tender.

    Step 3

  • Top rice with tandoori cauliflower. Garnish with a dollop of yogurt and sprinkle with cilantro.

    Recipe Tip

    For something different, try substituting tandoori sauce with Madras curry sauce for a curried rice bowl.
