  • Preheat oven to 375˚F. Heat oil in medium ovenproof skillet set over medium-high heat. Season chicken with salt and pepper. Cook 2 to 3 minutes or until chicken starts to brown. Add onion, carrot and zucchini to same pan and sauté 2 to 3 minutes or until vegetables start to soften. Stir in tandoori sauce and tomato paste; cook 1 minute. Stir in broth and bring to a boil. Stir in rice, cover and reduce to a mild simmer.

  • Cook 10 to 15 minutes or until rice absorbs most of the liquid. Let stand 5 minutes before serving.

  • Serve with dollop of yogurt and sprinkle of green onions.
