Instructions

  • This delicious, Indian-inspired chicken biryani dish is a savory and simple meal made easy in an Instant Pot for a busy weeknight dinner! This flavorful recipe was created by Shannon Coe (My Suburban Kitchen), for Minute®  Rice.

    Step 1

  • In a medium bowl, combine Greek yogurt, lemon juice, garlic, ginger, garam masala, chili powder, salt and turmeric. Stir well to combine.

    Step 2

  • Add chicken thighs and marinate for 15 minutes.

    Step 3

  • Turn Instant Pot to Sauté mode and add 2 tablespoons of ghee. Once melted, added chicken thighs and sauté for 3-5 minutes. Remove from pot.

    Step 4

  • Add remaining ghee and, once melted, add onions. Cook for 1-2 minutes.

    Step 5

  • Add chicken to pot and add rice, water, bay leaves and cinnamon stick. Close pot and secure lid. Cook on High for 4 minutes. Let steam naturally release for 10 minutes and then manually release pressure.

    Step 6

  • Stir rice well and remove to a large platter. Top with cilantro, mint and cashews before serving.

    Recipe Tips

If you prefer, replace chicken thighs with boneless, skinless chicken breasts.

Ghee is clarified butter and can be found in the international section of your grocery store. Butter can also be substituted for the ghee.

Enough for Everyone

This chicken and rice-based dish can often take an hour or more to make, however, when using Minute® Instant Jasmine Rice and your Instant Pot, the cooking time is reduced considerably. In many South Asian cultures, cooking and serving biryani is usually an indicator of a special occasion or celebration. Family and friends gather around the table in excitement to enjoy this delicious meal!

Make this dish ahead of time to reheat for weekly dinners or make it a meal prep option. Get organized and plan ahead so you can take advantage of the time the chicken is marinating and cooking in the Instant Pot.

Make your own Indian takeout at home with this complete dish that is full of flavor! The chicken and vegetables give this dish substance while the rice creates a filling base. The yogurt marinade makes the chicken tender and makes the entire dish a little tangy. Biryani is always a little different from cook to cook, but is usually a favorite with everyone!

Best Biryani

Make sure to cook the chicken completely before adding the Minute® Instant Jasmine Rice. For the best biryani taste, use Greek yogurt for this recipe. Since it is thicker than regular yogurt, Greek yogurt gives the marinade a creamier consistency. Cooking with ghee is another way to ensure a creamy texture, but if you don’t have any on hand, any other cooking oil will do.

Biryani Bonding

One ingredient you won’t find on the list for the perfect biryani is not something easily bought at the store — patience! For the best biryani, the chicken must marinate in the sauce for plenty of time, the vegetables must get to the perfect consistency and the rice must be distributed evenly. Part of the biryani experience is the anticipation! The added bonus? It gives you plenty of time to bond over cooking with family members and friends or to get a little time for yourself as you wait for the Instant Pot.
