This delicious, Indian-inspired Instant Pot Chicken Biryani with Rice dish is made simple with the help of Minute® Instant Jasmine Rice and your Instant Pot.
This delicious, Indian-inspired chicken biryani dish is a savory and simple meal made easy in an Instant Pot for a busy weeknight dinner! This flavorful recipe was created by Shannon Coe (My Suburban Kitchen), for Minute® Rice.
In a medium bowl, combine Greek yogurt, lemon juice, garlic, ginger, garam masala, chili powder, salt and turmeric. Stir well to combine.
Add chicken thighs and marinate for 15 minutes.
Turn Instant Pot to Sauté mode and add 2 tablespoons of ghee. Once melted, added chicken thighs and sauté for 3-5 minutes. Remove from pot.
Add remaining ghee and, once melted, add onions. Cook for 1-2 minutes.
Add chicken to pot and add rice, water, bay leaves and cinnamon stick. Close pot and secure lid. Cook on High for 4 minutes. Let steam naturally release for 10 minutes and then manually release pressure.
Stir rice well and remove to a large platter. Top with cilantro, mint and cashews before serving.
If you prefer, replace chicken thighs with boneless, skinless chicken breasts.
Ghee is clarified butter and can be found in the international section of your grocery store. Butter can also be substituted for the ghee.
