Ingredients

  • 2 cups Minute® White Rice
  • 1 can (14.5 oz) vegetable broth
  • 1 tbsp butter
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (16 oz) white hominy, rinsed and drained
  • 1 can (14.75 oz) cream style corn
  • 1 can (10.75 oz) condensed cream of onion soup

    Step 1

  • Preheat oven to 375°F. Prepare rice according to package directions, substituting broth for water.

    Step 2

  • In a large skillet, melt butter over medium heat. Sauté peppers until crisp-tender. Stir in rice, hominy, corn and soup.

  • Spread mixture into a greased, 2-quart casserole dish. Bake for 20 minutes.
