Ingredients

  • 2 cups Minute® Ready to Serve Yellow Rice
  • 1 cup frozen peas
  • 1 cup cooked shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

Instructions

  • This super simple Mediterranean Shrimp and Rice dish, made with Minute® Yellow Rice Cups, is ready in just minutes.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a medium, microwave-safe bowl, heat peas on HIGH for 3 minutes.

    Step 3

  • Add shrimp and microwave on HIGH for 1 minute.

    Step 4

  • Stir in olive oil, lemon juice and rice. Serve.

How to Juice a Lemon

If you don’t have any store-bought lemon juice available in the pantry you’ll need to juice your own lemons. The easiest way to do this is with a lemon juicer. Simply slice the lemon in half and press against the juicer until you have extracted all the juice you want. If you don’t have a juicer in your kitchen you can use a knife or fork, instead. If you are having trouble getting all the juice from a lemon, try putting it in the microwave for 15-20 seconds, this will soften the lemon making it easier to squeeze the juice out.
