Ingredients

  • 1 cup Minute® Ready to Serve Brown Rice & Quinoa
  • 1 cup baby kale
  • 1/4 cup halved cherry tomatoes
  • 1/4 cup thinly-sliced cucumber
  • 1/4 cup Greek vinaigrette dressing
  • 2 tbsp crumbled feta cheese
  • 4 Kalamata olives, pitted and halved
  • 1 marinated artichoke heart, drained and chopped

Instructions

  • Heat the rice and quinoa according to package directions.

  • Combine rice and quinoa, kale, tomatoes, cucumber and vinaigrette in a small bowl. Toss to blend well.
