Ingredients

  • 1 cup Minute®Jasmine Rice Cups
  • 1/2 cup pre-sliced mushrooms
  • 4 tsp jarred basil pesto
  • 1/4 cup jarred roasted red peppers, chopped
  • 2 tbsp crumbled feta cheese

Instructions

  • In just 3 steps and 4 minutes, you can put together a lovely Mediterranean-inspired rice bowl that’s packed with flavor! Save this recipe for a tasty meal for one or double the ingredients for a meal to share.

  • Heat rice according to package directions.

    Step 2

  • In a small, microwave-safe bowl, toss together mushrooms and pesto. Microwave on HIGH for 60-90 seconds or until mushrooms are tender.

    Step 3

  • Stir in rice and roasted red peppers. Top with feta.
