Ingredients

  • 1 cup Minute® Ready to Serve Jasmine Rice
  • 1/2 cup pre-sliced mushrooms
  • 4 tsp jarred basil pesto
  • 1/4 cup chopped store-bought jarred roasted red peppers
  • 2 tbsp finely crumbled feta cheese

Instructions

  • In just 3 steps and 4 minutes, you can put together a lovely Mediterranean-inspired rice bowl that is packed with flavor! Save this recipe for a tasty meal for one or double the ingredients for a meal to share.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In small, microwave-safe bowl, toss together mushrooms and pesto; microwave on High for 60 to 90 seconds or until mushrooms are tender.

    Step 3

  • Stir in rice and roasted red peppers. Top with feta.

    Recipe Tip:

    Use any leftovers the next day in a microwaved omelet or scrambled eggs.
