  • 1 tbsp canola oil
  • 1 lb beef flank steak, thinly sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 containers (8 oz, each) fresh white sliced mushrooms
  • 1/2 cup frozen shelled edamame or green peas, thawed
  • 1/2 cup thinly sliced red bell pepper
  • 3 tbsp apricot preserves
  • 3 tbsp light soy sauce
  • 1/2 tsp ground ginger

  • Prepare rice according to package directions.

  • Meanwhile, heat oil in a large skillet over medium-high heat.

  • Season steak with salt and pepper. Sear steak in hot skillet. Turning once, cook to desired doneness, about 15 minutes for medium.

  • Remove steak to a cutting board. Cover loosely with aluminum foil and let stand for 5 minutes.

  • Meanwhile, add mushrooms, edamame and bell pepper to skillet. Cook until vegetables are just tender, about 4-5 minutes.

    Step 6

  • In a small bowl, whisk together preserves, soy sauce and ginger. Stir into vegetables.

    Step 7

  • Slice steak thinly across the grain. Serve with vegetables over rice.
