  • Prepare rice according to package directions.

  • Meanwhile, heat oil in large skillet or wok set over high heat. Cook mushrooms 3 to 5 minutes or until they start to brown.

  • Stir in coleslaw mix and green onions. Cook 1 to 2 minutes or until vegetables start to soften. Stir in eggs and cook 1 to 2 minutes or until soft curds start to form.

  • Stir in rice and teriyaki sauce; cook until well coated and heated through, about 2 minutes.
