Chicken Piccata with Rice

  • 1 cup Minute® Brown Rice
  • 1 lb chicken scallopini (or thinly sliced chicken)
  • 4 tsp all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp finely chopped fresh thyme
  • 1/3 cup dry white wine
  • 1 cup low sodium chicken broth
  • 2 tbsp capers
  • 2 tbsp lemon juice
  • 2 tbsp finely chopped fresh parsley

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Toss chicken with flour, salt and pepper. Heat oil and butter in a large skillet set over medium heat. Add chicken and cook for 2 to 3 minutes per side, or until chicken is browned; transfer to a plate.

    Step 3

  • Stir in garlic and thyme. Cook for 1 minute, or until fragrant. Stir in wine; bring to a boil. Stir in broth; bring to a boil. Cook 2 to 3 minutes, or until thickened slightly. Add chicken back to sauce. Stir in capers, lemon juice and parsley. Cook for 1 to 2 minutes, or until sauce is thickened and chicken is cooked through.

  • Serve chicken and sauce over rice.

    Recipe Tips

  • For a different flavor, try substituting chicken scallopini with turkey, pork or veal.

    If you don’t have any fresh thyme on hand, feel free to substitute it with 1 tbsp dried thyme.

In a small bowl, coat the chicken strips with flour, salt and pepper and transfer them to your pan to brown the chicken and then remove. Next, add the garlic and thyme to the same pan to mix with all of those juices. Adding the wine and broth helps all of the flavors mix together nicely and thicken up before the chicken goes back in.
