Herbed Tomatoes, Chicken and Rice

Ingredients

  • 1/4 cup Italian salad dressing
  • 4 boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 1 cup water
  • 2 cups Minute® Brown Rice
  • 1 cup shredded mozzarella cheese
  • 1 tomato, chopped
  • 2 tbsp chopped fresh basil

Instructions

  • This Herbed Tomatoes, Chicken and Rice dish is exactly what you need for a delicious Italian-style dinner in under 30 minutes! This recipe combines Minute® Instant Brown Rice with chopped herbs, garlic, chicken and melted mozzarella for a flavor-packed meal.

    Step 1
    Heat dressing in a large skillet over medium heat.

  • Step 2
    Add chicken and garlic and cover. Cook for 5 minutes on each side, or until chicken is browned. Remove from skillet and set aside.

  • Step 3
    Add canned tomatoes and water to skillet. Stir in rice and bring to a boil.

  • Step 4
    Reduce heat to low and simmer, uncovered, for 10 minutes. Return chicken to skillet. Sprinkle with cheese; cover.

  • Step 5
    Cook on low heat for 5 minutes, or until chicken is cooked through (170°F). Top with chopped tomato and basil.

    Recipe Tips

    For more flavor, feel free to add in 2 teaspoons of dried, crushed rosemary or dried thyme with the canned tomatoes.
