Ingredients

  • 1/4 cup Italian dressing
  • 3 lb chicken thighs and drumsticks
  • 1 lb (approx. 2 cups) sliced mushrooms
  • 2 cups coarsely chopped onions
  • 1 green pepper, cut into strips
  • 1 red pepper, cut into strips
  • 1 clove garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 1 tsp salt
  • 1 tsp dried thyme leaves
  • 3 cups Minute® White Rice

    Step 1

  • Heat dressing in a large skillet over medium-high heat. Cook chicken, in batches, for 2-3 minutes on each side, or until evenly browned.

  • Place mushrooms, onions, peppers and garlic in slow cooker; top with chicken.

  • Combine tomatoes, salt and thyme in a large bowl. Pour over ingredients in slow cooker. Cover with lid and cook on Low for 6-8 hours, or on High for 5 hours.

  • Prepare rice according to package directions. Serve chicken mixture over rice.
