Ingredients

  • 1 bag Minute® Rice & Quinoa
  • 1 cup vegetable broth
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp minced shallot
  • 1 tsp Dijon mustard
  • 1/2 cup chopped cucumber, peeled and seeded
  • 1/2 cup chopped parsley
  • 1/2 cup halved cherry tomatoes
  • 2 green onions, thinly sliced
  • 1 tbsp chopped fresh mint leaves
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup crumbled feta cheese (optional)

Whip up this refreshing Mediterranean Tabbouleh Salad made with rice and quinoa, tomatoes, cucumbers, fresh mint, chopped parsley and a tasty mustard and shallot vinaigrette. A new take on a traditional salad or tasty side-dish, this dish is bound to delight your family. Try it with feta cheese for a salty pop of flavor.

    Step 1
    Prepare rice and quinoa according to package directions, substituting broth for water. Set aside to cool.

    Whisk together olive oil, lemon juice, shallot and mustard in a large bowl.

  • Step 3
    Fold rice and quinoa, cucumber, parsley, tomatoes, green onions and mint into vinaigrette. Stir to combine.

  • Step 4
    Season with salt and pepper. Top with feta cheese, if using.

  • Recipe Tips

    If you don’t have time to make a DIY dressing, we’ve got a quick fix. Substitute 1/4 cup of your favorite vinaigrette for the olive oil, lemon juice, shallots and mustard in the recipe.

    For a vegan dish, leave out the optional feta cheese in the recipe.

Tabbouleh with Quinoa

Originating in Lebanon and Syria, this cold dish is a 100% vegetarian salad typically made with bulgur, finely chopped parsley and mint, tomatoes and onions. Generally, it is seasoned with a bit of salt, pepper, olive oil and lemon juice.

Our Mediterranean Tabbouleh Salad replaces bulgur with speedy Minute® Instant Rice & Quinoa for an equally nutty flavor and filling dish. Instead of onions, we use shallots for a touch of sweetness. Dijon mustard, chopped cucumber and green onions add even more crunch and freshness to this dish.

This veggie-powered recipe is great for storing. You can make a large batch on the weekend and enjoy it throughout the week. The rice and quinoa will soak up the rich flavors of all the ingredients and, with no lettuce in the recipe, there’s no risk of wilted ingredients.
