Instructions

  • Start your day off right with this savory yet simple breakfast. Take the pesto egg TikTok trend to the next level by adding a fluffy portion of Minute® Rice. 

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Spoon 1 tablespoon of pesto into a medium, microwave-safe bowl or ramekin. Crack eggs into bowl. Spoon remaining pesto over top. Pierce both yolks and whites with a fork a few times (this will help prevent eggs from exploding).

    Step 3

  • Cover bowl with plastic wrap, pulling back some of the plastic wrap to allow venting. Microwave on HIGH for 60-75 seconds or until egg whites are set and yolks are still runny.

    Step 4

  • Serve eggs over rice; sprinkle with salt and pepper. Top with avocado.

    Recipe Tip

    Scatter halved grape tomatoes, pitted black olives or arugula over top, if desired.
