Heat rice according to package directions.
Spoon 1 tbsp pesto into medium microwave-safe bowl or ramekin; crack eggs into bowl. Spoon remaining pesto over top. Pierce both yolks and whites with fork a few times (this will help prevent eggs from exploding).
Cover bowl with plastic wrap, pulling back some of the plastic wrap to allow venting. Microwave on High for 60 to 75 seconds or until egg whites are set and yolks are still runny.
Serve eggs over rice; sprinkle with salt and black pepper. Top with avocado.
Scatter halved grape tomatoes, pitted black olives or arugula over top if desired.
