Ingredients

  • 1 cup Minute® Ready to Serve Garlic & Olive Oil Jasmine Rice
  • 1/2 cup (4 oz) cooked shrimp, peeled and deveined
  • 1 tbsp prepared pesto
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup kalamata olives, pitted
  • 1/4 cup diced yellow pepper
  • 1 tbsp thinly sliced fresh basil
  • 1 tbsp pine nuts

Instructions

  • Enjoy this refreshing rice bowl made with pesto-coated shrimp, juicy tomatoes, crisp pepper and olives. Garnished with freshly chopped basil and nuts, it’s a tempting, quick and tasty dish.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Toss shrimp with pesto in a microwave-safe container. Microwave on MEDIUM for 45-60 seconds, until heated through.

    Step 3

  • Top rice with pesto shrimp, tomatoes, olives and yellow pepper. Garnish with basil and pine nuts.

    Recipe Tips

    Substitute pine nuts with chopped almonds or walnuts, if you prefer.

    Serve this dish with a lemon wedge, if desired.
