Ingredients

  • 1 cup Minute® Ready to Serve Yellow Rice
  • 1 cup small cauliflower florets
  • 1/2 cup shredded, cooked chicken
  • 2 tsp harissa paste
  • 2 tbsp finely chopped fresh cilantro

Instructions

  • You’ll love this delicious spin on simple chicken and rice. Packed with flavor and spice, and made with just 5 ingredients, it’ll be a weekday go-to in no time.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Toss together cauliflower, chicken, harissa, and 2 tablespoons of water in a microwave-safe bowl. Cover with plastic wrap, venting to allow some air to escape. Microwave on HIGH for 2-2 1/2 minutes, or until chicken and cauliflower are tender.

    Step 3

  • Serve chicken mixture over rice, garnished with cilantro.
