  • 1 can (8 oz.) crushed pineapple in natural juice, drained (reserve juice)
  • 1 Minute®Basmati Rice Cup
  • 1 egg, lightly beaten
  • 1 can (5 oz.) evaporated skim milk
  • 1 can (15 oz.) sweet potatoes, drained
  • 1/2 tsp ground cinnamon
  • 2 cups miniature marshmallows

    Step 1

  • Add 2 tbsp of the reserved pineapple juice to the rice. Heat rice according to package directions. Preheat oven to 400°F. 

    Step 2

  • In a large bowl combine pineapple, cooked rice, egg, milk, sweet potatoes and cinnamon. Mix well. Spread in a 2-quart casserole dish. Top with marshmallows. 

    Step 3

  • Bake for 20 minutes, or until marshmallows begin to brown. 





How to Cook a Sweet Potato

  • Bake: Scrub the potatoes and afterwards pat dry. Proceed to prick with a fork. Bake in the oven on a baking sheet for 40-60 minutes at 425ºF. Serve with butter, brown sugar or cinnamon.
  • Microwave: With a fork, prick holes all over the potato. Microwave on high for 8-10 minutes and turn the potato at least once during this time. Use the toppings of your choice. 
  • Slow Cooker: Clean and rub potatoes with olive oil. Set the oiled potatoes in the slow cooker and cook for 4 hours on high or 8 hours low. 
  • Air Fryer: Cut them into 1 inch pieces. Cover the cubes in your favorite seasonings and oil. Place in the air-fryer and cook for 15 minutes at 360ºF. Make sure you toss them every 5 minutes. 

Storing Sweet Potatoes

Potatoes should be kept in a cold, dry, and dark area if they won’t be used straight away. Sweet potatoes will dry out if they are stored in the refrigerator.
