Step 1
Add 2 tbsp of the reserved pineapple juice to the rice. Heat rice according to package directions. Preheat oven to 400°F.
Step 2
In a large bowl combine pineapple, cooked rice, egg, milk, sweet potatoes and cinnamon. Mix well. Spread in a 2-quart casserole dish. Top with marshmallows.
Step 3
Bake for 20 minutes, or until marshmallows begin to brown.
Potatoes should be kept in a cold, dry, and dark area if they won’t be used straight away. Sweet potatoes will dry out if they are stored in the refrigerator.
