Preheat oven to 425°F. Prepare rice according to package directions.
In a large skillet brown sausage over high heat. Drain fat, if necessary.
Stir in cooked rice, 1 cup cheese and tomato sauce. Spread mixture into a 2-quart casserole dish.
With a serving spoon, make six indentations in the mixture, spaced equally apart. Place a bell pepper ring around each indentation and gently press in place. Crack an egg into each ring and season with salt and pepper. Sprinkle with remaining cheese.
Bake for 20 minutes or until eggs have just set. Serve topped with crushed red pepper flakes, if using.
