Ingredients

  • 2 cups Minute® White Rice
  • 1 pkg (8 oz) bulk breakfast sausage
  • 1 1/2 cups shredded pizza cheese blend, divided
  • 1 can (8 oz) tomato sauce
  • 1 red bell pepper, seeded and sliced into rings
  • 6 eggs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • crushed red pepper flakes (optional)

Instructions

  • This country breakfast casserole, made with Minute® Rice, is ready in just 30 minutes and includes plenty of great-tasting breakfast foods.

    Step 1

  • Preheat oven to 425°F. Prepare rice according to package directions.

    Step 2

  • In a large skillet, brown sausage over high heat. Drain fat, if necessary.

    Step 3

  • Stir in cooked rice, 1 cup cheese and tomato sauce. Spread mixture into a 2-quart casserole dish.

    Step 4

  • With a serving spoon, make six indentations in the mixture, spaced equally apart. Place a bell pepper ring around each indentation and gently press in place. Crack an egg into each ring and season with salt and pepper. Sprinkle with remaining cheese.

    Step 5

  • Bake for 20 minutes or until eggs have just set. Serve topped with crushed red pepper flakes, if using.

Make Your Own Tomato Sauce

Tomato sauce is a common kitchen staple and can be found in most pantries, however what can you do if you’ve run out? Luckily, it’s actually very simple to make your own tomato sauce at home. To begin with, cut your tomatoes in half and get rid of the seeds. Grate the tomatoes into a saucepan, then heat over a medium heat. Add in some salt, olive oil, tomato paste, garlic and basil and bring to the boil. Leave the mixture to simmer until the sauce has reduced by half.

How to Slice Your Red Bell Peppers Into Rings

To begin with, lay the bell pepper on its side and slice off the stem and the bottom of the pepper. You’ll then want to run the knife around the inside of the pepper to remove the seeds. Once you have deseeded the pepper, lay it on its side and cut it into rings.
