Country Breakfast Casserole

A complete breakfast in one dish, this casserole is always a hit. With white or whole-grain brown rice, crumbled breakfast sausage, just the right amount of pizza cheese blend, red bell peppers and eggs, it’s a colorful, hearty, delicious way to start the day. And, it’s ready in just 30 minutes!

Ingredients

  • 2 cups Minute® White Rice or Minute® Brown Rice
  • 1 pkg (8 oz) bulk breakfast sausage
  • 1 1/2 cups shredded pizza blend cheese, divided
  • 1 can (8 oz.) tomato sauce
  • 1 red bell pepper, seeded and sliced into rings
  • 6 eggs
  • salt and ground black pepper, to taste
  • crushed red pepper flakes (optional)

Instructions

  • Step 1

  • Preheat oven to 425°F. Prepare rice according to package directions.

    Step 2

  • In a large skillet brown sausage over high heat. Drain fat, if necessary.

    Step 3

  • Stir in cooked rice, 1 cup cheese and tomato sauce. Spread mixture into a 2-quart casserole dish.

    Step 4

  • With a serving spoon, make six indentations in the mixture, spaced equally apart. Place a bell pepper ring around each indentation and gently press in place. Crack an egg into each ring and season with salt and pepper. Sprinkle with remaining cheese.

    Step 5

  • Bake for 20 minutes or until eggs have just set. Serve topped with crushed red pepper flakes, if using.
