Quinoa and Sausage Breakfast Muffins

  • 2 cups gluten-free baking mix
  • 1 cup (8 oz) shredded Cheddar cheese
  • 1 cup Minute® Ready to Serve Organic White & Red Quinoa
  • 1 cup (8 oz) cooked turkey sausage crumbles
  • 1 cup milk

    Step 1

  • Preheat oven to 400°F.

    Step 2

  • Coat a 12-cup muffin pan with nonstick cooking spray.

    Step 3

  • Combine baking mix, cheese, quinoa (unheated), sausage and milk together in a large mixing bowl. Blend well.

    Step 4

  • Fill each muffin cup 3/4 full with batter.

    Step 5

  • Bake for 20 to 25 minutes, or until tops are lightly browned. Serve warm.

    Recipe Tips

    Store leftovers covered in refrigerator.

    For bite-sized muffins, use 2 mini-muffin pans and decrease cook time to 12 to 15 minutes.
