  • 1 cup Minute® Ready to Serve Cilantro Lime Rice
  • 2 small sweet potatoes
  • 2 tbsp hummus
  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/2 cup kale leaves, thinly sliced
  • 2 tbsp feta cheese, finely crumbled


  • A filling meal can be as simple as packing extra protein – from chickpeas, hummus, and feta cheese –  and zesty Cilantro & Lime Jasmine Rice into a sweet potato!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Meanwhile, prick sweet potatoes all over with fork. Microwave on HIGH for 8 -10 minutes or until tender. Let stand for 2 minutes.

    Step 3

  • Slit each sweet potato lengthwise without cutting all the way through; gently pull potatoes open.

    Step 4

  • Layer rice, hummus, chickpeas, and kale inside potatoes; sprinkle with feta.

    Recipe Tip

    Drizzle Greek or Italian dressing over top of each potato, if desired.
