Ingredients

  • 1 cup Minute® Ready to Serve Cilantro Lime Rice
  • 2 small sweet potatoes
  • 2 tbsp hummus
  • 1/2 cup kale leaves, thinly sliced
  • 1/2 cup canned chickpeas, drained and rinsed
  • 2 tbsp feta cheese, finely crumbled

Instructions

  • Step 1

  • Heat rice according to package directions.

    Step 2

  • Meanwhile, prick sweet potatoes all over with fork. Microwave on High for 8 to 10 mins or until tender. Let stand for 2 mins.

    Step 3

  • Slit each sweet potato lengthwise without cutting all the way through; gently pull potatoes open.

    Step 4

  • Layer rice, hummus, kale and chickpeas over potatoes; sprinkle with feta.

    Serving Tip

    Drizzle Greek or Italian dressing over top if desired.
